The Picsa
dough

Based on a traditional Argentinian recipe we have created our own pizza dough, made with three different flours, which is allowed to stand for twenty-four hours before twice baking in our wood-fired oven.

Hot dishes are prepared in an antique wood-fired oven, made by Jumaco & Maestro, fourth generation manufacturers of bakers' ovens in Madrid. For cooking, we use holm oak from controlled sources.

Our
jamón

Much of the produce we use in our dishes comes from our own kitchen - such as cooked ham, carefully selected and cooked in our own oven.

Picsa
Cheese

Instead of using mozzarella cheese, so popular in Italian cuisine, we wanted to make our own cheese from two Galician varieties and another two whose origin is our restaurant's best kept secret.

Café

Coffee, from the "house of coffee and espresso", Toma Café, is prepared in an authentic Italian machine brought over from Milan.

Our wine list is prepared by the well-known expert in gastronomy, Federico Oldenburg, who has included a wide variety of national and international fine wines, specially selected to accompany our dishes.

Virgen

True to our philosophy of offering limited-availability artisan products in Picsa, we have La Virgen beer. Available on tap or in Lager and Jamonera varieties.
